This is a guide I just stumbled across, which covers setup and management for your own email system in a manner that should protect you from NSA gobbling. I say ‘should’ because there’s no 100%. He makes note at one point that if someone else has root access, for instance, they could be instructed by a government agent (subpoena, etc) to access the server and decrypt shit.
Needless to say this is relatively advanced, though. I post it here out of interest, not because I recommend folks go for it. I’ll have to give it a lot of thought, myself.
Especially because, on the other hand, you’re only partway secure in that whomever you’re sending shit to or receiving shit from would need to be nice and secure as well. That is to say, if you decide to start plotting to OVERTHROW THE GOVERNMENT (Hello, Prism, Echelon, and Carnivore! How are the kids?), and email your friend mega-jihadi1@gmail.com, Gmail can hand over all that shit just as easily.
